Chocolate Chip Cookies (GF, Vegan option)

These babies are savory and soft. Quick to throw together with very little ingredients needed. A guilt-free dessert to munch on daily. Only 6.5 net carbs per cookie. Enjoy!

Prep: 5min       Bake: 10min       Total: 20min         

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut sugar
  • 2 TBSP coconut oil
  • 1 egg (do chia or flax egg to keep it vegan)**
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 cup dark chocolate chips

**Flax/chia "egg": Add 2 TBSP of water, 1 TBSP of the seed into a tiny bowl. Stir together, let sit for a minute, then it's ready to add into the recipe.

Directions:

  • Preheat oven 350 degrees
  • Combine coconut sugar, coconut oil, "egg", salt, vanilla and baking soda. Stir. Then add almond flour. 
  • Roll into 14 balls and flatten. Then place onto parchment paper on cookie sheet.
  • Bake 9-12 minutes
