Healthy Fudge (Vegan & Paleo approved)

Don't we all love chocolate? Especially in the winter months... it seems like chocolate is a comfort go-to as we all pack on a few extra lbs to hibernate. Well, I'd like to bring to your attention a much healthier indulgence than the fudge, truffles & chocolates you'd find in the stores. This recipe is super easy & satisfying! And it's guilt free (as long as you don't go ham on it). 

Vegan & Paleo (Inspired by Detoxinista) 

Prep time: 5-10min, chill time: 1 hour in freezer (@minimum)

Ingredients:

  • 1 cup Almond Butter (coconut butter is even better, but more $$$)
  • 1/3 cup Coconut Oil
  • 1/4 cup Raw Cacao Powder
  • 1/4 cup Pure Maple Syrup
  • 1 TSP Pure Vanilla Extract
  • 1/2 TSP Sea Salt 

Directions:

In a medium bowl add in the oil (melted) with the nut butter. Stir well. Then add in the remaining ingredients. Stir until smooth. Pour into a 4x8 inch pan (coat the pan in wax paper 1st). Put in the freezer for an hour at minimum. Then slice into small pieces and indulge! (I doubled my batch and used an 8x8)

*Makes 20-25 pieces

**Almond butter gives it a salty & sweet flavor. Coconut butter gives it a white & dark chocolate chocolatey taste.

Macros per piece (if serves 25): 100cals, 2.4g protein, 8.7g fat, 4.8g carbs & 1.3g fiber

Macros per piece (if serves 20): 125cals, 3g protein, 10.9g fat, 6g carbs & 1.7g fiber
