Cauliflower Pizza Crust (Vegan & GF)
Inspired by Minimalist Baker
Ingredients:
2, 12 oz Bags Frozen Cauliflower Rice (or make your own)
1 Flax Egg (3 TBSP flaxseed + 4-6 TBSP water)
3 TBSP Nutritional Yeast
1 TSP Oregano
1 TSP Basil
1 TSP Garlic
1.5 TBSP Cornstarch (or Arrowroot Starch) *binder*
1/4 TSP Sea Salt
Directions:
Preheat oven 400F and line a pizza pan or baking sheet with parchment paper.
Pour the cauliflower rice into a large colander, add pour room temperature water over the rice to defrost it.
Drain the liquid, then use either a cheesecloth or clean wash cloth to squeeze out the excess water from the "rice".
Mix together the 3 TBSP of ground flax seeds with 4 TBSP of water to create an “egg.” Set aside and allow the mixture to thicken. You might need to add up to 2 more TBSP of water to the mixture, but it will vary depending on how “wet” your crust base turns out.
Place the drained cauliflower in a large bowl, then add in the vegan egg, the nutritional yeast, basil, oregano, garlic, salt. Add water as needed (up to 2 TBSP) to mix the dough. Use as little as necessary to keep the crust crisp.
Once stirred well, press the mixture onto the pizza pan or baking sheet. Press the crust together firmly, making sure that there are no “thin spots” where it might crack.
Bake at 400F for 30 minutes, until the top is lightly golden and dry to the touch.
Using an additional piece of parchment paper, flip the pizza crust, and then bake for an additional 15 minutes.
Then add your toppings and bake for a final 8-10 minutes.
